Tropical Tartness: A Refreshing Twist on Sweet Mead with MELINIA

As the co-owner of Costa Rica Meadery, the proud producer of MELINIA, I might just have a tiny bit of bias when it comes to our creations. But, let's be honest, who wouldn't? I've always had a soft spot for all of our sweet meads, yet MELINIA holds a special place in my heart. What sets it apart for me is its delightful tartness, a playful twist that dances on the palate, distinguishing it from our other sweet offerings.

I find immense joy in sipping this mead from a cordial glass, where its vibrant flavors and aromas can truly express themselves. However, my fondness doesn't stop there. Incorporating MELINIA into a spritz cocktail elevates it to a whole new level of refreshment. It's hard to imagine a more invigorating drink to enjoy on a warm, sunny afternoon in the tropics. The combination of its tartness with the effervescence of a spritz makes it an unparalleled delight.

"Melinia is our second melomel with jabuticaba. We wanted to make a honey wine that captured the essence of Jabuticaba and that its flavor was not diluted with water. That's why for Melinia we only use tropical forest honey, Jabuticaba juice and yeast. We ferment honey with the freshly pressed juice of fresh jabuticabas. Once its fermentation is complete, we age it for 15 months before being bottled. It has an exotic and assertive aroma of honey and jabuticaba. It is sweet with a bright acidity that shows a excellent balance between the components." -Alejandra Araya

I recommend serving MELINIA in a temperature range of 12-14°C (53.6-57.2°F) . This temperature range is slightly cooler than room temperature, which helps refresh the palate, especially given its sweet and tart profile. However, it is warm enough to ensure that the intricate flavors and aromas, particularly the exotic notes of jabuticaba and the richness of rainforest honey, are not dulled.

Why this temperature?

  • Enhances Aromatics : Cooler temperatures can suppress the volatility of some aromatic compounds. Serving MELINIA slightly chilled ensures that its vibrant, fresh aromas are front and center without being too muted.

Before opening

  1. Temperature : Store MELINIA in a cool, dark place where the temperature is constant. Ideal storage temperatures for mead are between 10°C and 15°C (50°F and 59°F). Avoid locations with significant temperature fluctuations, as this can cause expansion and contraction of the mead, potentially compromising the seal or affecting its aging process.
  2. Position : Keep the bottle horizontal. This is particularly important for corked meads, as it keeps the cork moist, preventing it from drying out and shrinking, which could allow air into the bottle and spoil the mead.
  3. Light : Protect MELINIA from direct sunlight and strong artificial lights, as UV rays can degrade and prematurely age the mead. A dark closet, wine cellar or wine refrigerator is ideal.

After Open

  1. Re-cap : If you don't finish the bottle, recap it tightly. If the original cork doesn't fit well, use a wine stopper designed to seal open bottles.
  2. Refrigeration : Once opened, refrigerate the mead. The cold temperature slows down the oxidation processes and helps preserve the flavors and aromas of the mead for a little longer.
  3. Consumption Time : Ideally, consume opened mead within a few days, up to a week. Even when recapped and refrigerated, the mead will gradually begin to lose its character and freshness.
  4. Observation : Keep an eye out for any changes in the appearance, smell, or taste of the mead. If it begins to develop off-flavors, oxidizes too much, or shows signs of deterioration, it is best to discard it.

By following these storage guidelines, you can help ensure that MELINIA is enjoyed at its best, both before and after opening. Proper storage not only preserves quality, but also allows you to appreciate the full range of flavors and aromas intended by the mead maker.
