Harmonious. Sumptuous. Vigorous.

ORBE , an exquisite honey wine, robust and harmonious, fermented with fresh jabuticaba and tropical forest honey, and aged in French oak for 6 months. It presents a dark ruby color and a captivating bouquet of dried fruits, jabuticaba, and woody notes with a touch of vanilla. On the palate, it offers an elegant dryness with well-structured tannins, flavors of ripe black fruits, spices, and a subtle hint of oak. Its smooth, velvety texture, combined with refreshing acidity and moderate tannins, culminates in a sophisticated and lingering finish.

  • 750 mL bottle
  • 13.5% alc. / vol.
  • Gluten-free

Ingredients: Water, Honey, Jabuticaba, Yeast.

"Orbe was born from my deep appreciation for the unique qualities of the jabuticaba, a fruit that bears striking similarities to the grapes used in red wines. During harvest, when the jabuticaba is at its peak, I knew I wanted to create a mead that showcased the full potential of this fruit so deeply connected to our land. By fermenting the whole fruit, including skins and seeds, I was able to capture not only the vibrant ruby color but also a tannic complexity reminiscent of a fine red wine. Aging in French oak added depth, infusing the mead with subtle woody aromas that beautifully complement the jabuticaba's fruity essence. This project was a personal experiment for me in aging mead in wood, a technique I rarely use in my winemaking process. The success of this experiment reinforces my belief in the incredible potential of Costa Rica's tropical fruits to produce world-class meads and fruit wines. With a light to medium body, it's reminiscent of a Shiraz-Pinot Noir blend." Noir, Orbe offers a unique and versatile tasting experience. It's ideal for pairing with dishes typically associated with these red wines, but it's also flexible enough to be enjoyed on any occasion. - Alejandra Araya

THE BEST PAIRINGS WITH ORBE

Plantain chips with seasoned beans and mango

The crispy texture of the patacones (fried plantains) pairs perfectly with refried beans and mango salsa, offering a balance of sweet and savory flavors. The jabuticaba fruit in Orbe complements the mango, while subtle woody notes enhance the earthy richness of the beans. This appetizer highlights the wine's complexity, creating a vibrant start to the meal.

GRILLED PORK LOIN WITH TAMARIND GLAZE

The light acidity and sweetness of the tamarind glaze on the grilled pork loin harmonize beautifully with the fruity notes of the jabuticaba in Orbe. The wine's subtle oak notes combine with the smoky flavors of the pork, while its structured tannins complement the richness of the meat. This pairing offers a delightful balance of flavors, enhancing both the dish and the wine.

Honey wine ORBE paried with beef stew

BEEF STEW

Beef stew, a traditional Costa Rican dish, offers deep, rich flavors that pair beautifully with Orbe. The jabuticaba fruit in the wine balances the robustness of the slow-cooked beef, while the oak notes complement the savory and spicy elements of the dish. The stew's smooth texture aligns with Orbe's velvety mouthfeel, creating a comforting and sophisticated pairing.

FREQUENTLY ASKED QUESTIONS ABOUT ORBE

Orbe should be served slightly chilled to best express its complex aromas and flavors. A serving temperature of 12-14°C (54-57°F) is ideal. This temperature range helps to highlight the wine's depth and balance the tannin structure without diminishing its delicate aromatics.

Given Orbe's rich and nuanced profile, I recommend serving it in a Bordeaux glass . This type of glass has a tall bowl, which helps concentrate the wine's aromas toward the top of the glass, enhancing the olfactory experience before the first sip. The glass's generous size also allows for proper aeration, which can help soften the tannins and release more complex flavor and aroma compounds.

Orbe, like many complex, handcrafted wines, should be stored in a cool, dark place, ideally at a constant temperature of around 12-13°C (53-55°F) . Bottles should be kept on their side to maintain the cork's moisture, which is crucial for long-term storage and preserving the wine's quality. Avoiding temperature fluctuations and exposure to light will help preserve the wine's integrity and flavor profile.

If you expect to consume Orbe within a few years of bottling, these conditions will be sufficient. However, if you desire long-term aging, ensuring a stable environment with controlled humidity (around 70%) will be important to prevent the cork from drying out or mold from growing.

Implementing these recommendations will ensure that Orbe is presented in the best possible condition, allowing its unique qualities to shine and providing an optimal tasting experience.

For Orbe, I would recommend consuming it within 3 to 5 days of opening to enjoy its optimal flavors and aromas. To extend its freshness within this timeframe, be sure to:

  • Reseal the bottle tightly after each service to minimize additional oxygen exposure.
  • Store the opened bottle in a cool, dark place. If possible, keeping the opened bottle in the refrigerator can help slow the oxidation process, even for red wines like Orbe. Just remember to allow the wine to return to its recommended serving temperature before enjoying it again.
  • Consider using a wine preservation tool if available. Vacuum pumps, inert gas preservers, or even a smaller, cleaner bottle to reduce the volume of air in contact with the wine can significantly extend its shelf life after opening.

Following these guidelines will help maintain the quality of Orbe once opened, allowing you to enjoy its distinctive flavor and aroma for a few days.
