MEADMAKER NOTES
THE BEST PAIRINGS WITH PASSIFLORA
These pairings are designed to enhance the experience of tasting PASSIFLORA, highlighting its unique flavors and making it a versatile accompaniment to a variety of dishes, especially those that include dark chocolate in desserts.
STRONG-FLAVORED CHEESES
PASSIFLORA, with its sweetness and complex acidity, is an ideal companion for cheeses with strong flavors. Softer cheeses tend to disappear in the presence of the sweetness and acidity of PASSIFLORA, so it is recommended to opt for cheeses with an intense flavor. Blue cheeses, such as Roquefort or Gorgonzola, are excellent options. If you don't like blue cheeses, hard, aged cheeses also work great. Try a Parmigiano Reggiano or an Extra Matured Cheddar. These cheeses highlight the fruity and honeyed notes of PASSIFLORA, creating a balanced and delicious pairing.
SPICY FOOD
Spicy food is another fabulous combination for the sweetness of PASSIFLORA. Whether you're enjoying Thai, Indian, Mexican or Creole dishes, the spicier the dish, the better your glass of PASSIFLORA will taste. In addition to balancing the spices present with its sweetness, PASSIFLORA — best served cold — can also offer a cooling sensation if your mouth starts to feel burning. Try pairing PASSIFLORA with a spicy Thai curry, chorizo tacos with spicy sauce or a ceviche with chili. These pairings enhance the tropical and honeyed flavors of the mead, creating a harmonious and refreshing taste experience.
DARK CHOCOLATE
Dark chocolate is an exceptional companion for the sweetness and tropical notes of PASSIFLORA. The bitterness of dark chocolate creates a perfect contrast with the sweetness of honey wine, enhancing its fruity and honeyed flavors. Try pairing PASSIFLORA with a dark chocolate mousse, a dark chocolate cake with raspberries, or a dark chocolate fondue accompanied by tropical fruits such as pineapple, mango and banana. These pairings highlight the complexity of PASSIFLORA, offering a rich and balanced flavor experience.
FREQUENTLY ASKED QUESTIONS ABOUT PASSIFLORA
8–10°C (46–50°F)
PASSIFLORA should be served at a temperature of 8-10°C. This cool temperature helps to enhance its fruity and honeyed aromas, as well as its balance between sweetness and acidity.
For more information, see our blog post on Ideal Temperatures for Serving Honey Wines, Meads, and Beers .
To fully enjoy PASSIFLORA, we recommend using a dessert wine glass, a cordial glass or a white wine glass. These glasses, with their slightly flared shape, allow the aromas to be concentrated and directed towards the nose, improving the tasting experience.
PASSIFLORA should be kept in a cool, dark place, away from direct light and sudden changes in temperature. The bottle should be stored horizontally to keep the cork moist and prevent it from drying out, which could allow air in and affect the quality of the honey wine. Maintaining a constant temperature and avoiding exposure to vibrations will also help preserve its optimal characteristics.
PASSIFLORA, being a sweet honey wine with an alcohol content of 13%, has a long shelf life. If stored correctly, it can stay in optimal condition for 5 to 10 years. However, once opened, it is advisable to consume it within 1 to 2 weeks and keep it in the refrigerator to preserve its freshness and flavor.
